Vitamin D and Coronavirus

​It has been in the news lately about the benefits of Vitamin D and the Coronavirus.  Studies are showing that those with good levels of Vitamin D are less likely to have a severe reaction to the virus. 
 
I would definitely agree with this, in fact it was part of a recent webinar that I did on the very subject.  Vitamin D is a vital nutrient in the immune system.
 
My perspective would be this.  We need to stop isolating which nutrient we need and start looking at the overall picture.  Because it has been in the news lately about Vitamin D many will have gone out to buy Vitamin D, but without Vitamins A, C & E and mineral Selenium and Zinc you won’t have amazing results.
 
Our focus needs to adjust, to be looking at overall healthiness, healthy diet, lifestyle and mindset.
 
Now if you were someone who regularly ate fresh fish, fresh fruit, fresh vegetables, a variety of wholegrains (not just wheat), nuts and seeds, drank plenty of water, spent time outside and allowed yourself to rest , likely you will not need to be using single supplements.  You would be getting what your immune system needs. 
 
Some people are better at making Vitamin D from sunshine than others so some will need a top up, for those I would recommend a Vitamin D3 spray for best effectiveness.  You should still be focused on the other nutrients you need for health as well, vitamin D does not work alone
 
But remember you can also get Vitamin D form foods
  • Oily fish
  • Egg yolk
  • Unpasteurised milk
  • Yoghurts
  • Mushrooms
  • Almonds/almond milks

The perfect time for a detox

​Spring is in the air and this is the time of year that is perfect to cleanse the body after a long winter.
 
Our ancestors knew this.  This time of year, Nettle soup would have been on the menu, often with cleavers and dandelion.  These 3 herbs are traditionally used to help the liver and kidneys process toxins out of our body.
 
You may have heard that our body had the capacity to detox itself, that you don’t need to detox.  Well that is true in one sense but with the level of environmental toxins, stress toxins and food toxins (pesticides/processed foods/ chemicals) that our body has to defend itself from, then a simple detox is definitely in order.
 
Here is a simple soup I make this time of year using what mother nature put there for us.
 
Nettle, cleavers, dandelion and wild garlic soup
Ingredients
Dandelion leaves
Wild garlic
Nettle leaves
Cleavers
3 cloves garlic - chopped
5 baby boiler potatoes - halved
500ml veg stock
1 onion - chopped
2 celery stalks - chopped
Himalayan Salt
1 Tbsp rapeseed oil
Method
Add the onion, garlic and celery to a heavy based pan with the rapeseed oil. Fry till soft
Add the greens- dandelion leaves, wild garlic, nettle and cleavers. Continue frying for 1 minute
Add the potatoes and stock. Bring to the boil then simmer for 1/2 hour
Blend till smooth and serve

Helping to flatten the curve

 We are roughly 4 weeks in now with the Covid-19 virus.  A Term we are becoming familiar with is flatten the curve.  Our focus is on avoiding contact with each other to reduce the spread of the virus so as not to overwhelm our health service with a large number of severe cases together.

There is another way of helping to achieve this that we haven’t been talking as much about.
 
Supporting our own immune systems so as to be less suceptable if we do come in contact.
 
The majority of severe cases here in Ireland have been those who are immune-compromised, the elderly and those with pre-existing conditions.  This shows us that those with a stronger defence (immune system) are less suceptable to more severe infections.  This in turn would suggest if we can all strengthen our immunity while we wait, this will help reduce the number of severe cases our health services have to deal with.
 
So how do we do that?
  • Lots of Veg! and fruits, lots of fresh produce.  Eat more foods that don’t need a label.
  • Support the gut – take a good probiotic
  • Echinacea – an amazing immune modulating herb, check for interactions and only take for a 2 week period
  • Breathe – do 10-15 minutes of deep breathing starting now.  Strengthen those lungs
  • Sleep – 10pm-7am
  • Get out for a walk – within 2K – sunshine vitamin D is vital for good immune support
 
There is so much we can do to tip the scales in our favour.

The resurgence of Foraging

 The lockdown has bought a lot of negatives but it is balanced with the positives.
 
Something I wasn’t expecting was the sudden resurgence of the forager.  I love that we’re building our own victory gardens, foraging and baking our own breads again.  Getting back to basics because we find we now have the time for it,  maybe we were filling our time with unnecessary pursuits.  We’re reconnecting with our communities and the earth, and most are grateful for that.
 
When it comes to foraging its best to be safe than sorry.  There are some simple rules to follow:
 
·      Always be 100% certain of what you are picking – buy a foraging guide! If in doubt, leave it out!
·      Always pick from clean spaces – not off the busy roadside, urban built up areas etc.  This is to avoid toxins from road pollution.
·      Always ask permission if you are going onto someone’s land
·      Never take the root – sustainability is key
·      Never pick an endangered species
·      Only take what you need
 
 
Some wonderful herbs to pick this time of year
·      Nettle  - make tea/syrup/soup/stew
·      Dandelion leaves – make tea/syrup
·      Gorse – syrup/infused apple cider vinegar
·      Wild garlic – pesto/pickle
·      Cleavers – tea/syrup/in salads
·      Wild sorrel – salads
·      Scarlet Elfcup mushrooms – cooked only, never raw (Never pick mushrooms unless you know what you are doing!  The wrong mushroom can be highly poisonous)
