Spring is in the air and this is the time of year that is perfect to cleanse the body after a long winter. Our ancestors knew this. This time of year, Nettle soup would have been on the menu, often with cleavers and dandelion. These 3 herbs are traditionally used to help the liver and kidneys process toxins out of our body. You may have heard that our body had the capacity to detox itself, that you don’t need to detox. Well that is true in one sense but with the level of environmental toxins, stress toxins and food toxins (pesticides/processed foods/ chemicals) that our body has to defend itself from, then a simple detox is definitely in order. Here is a simple soup I make this time of year using what mother nature put there for us. Nettle, cleavers, dandelion and wild garlic soup Ingredients Dandelion leaves Wild garlic Nettle leaves Cleavers 3 cloves garlic - chopped 5 baby boiler potatoes - halved 500ml veg stock 1 onion - chopped 2 celery stalks - chopped Himalayan Salt 1 Tbsp rapeseed oil Method Add the onion, garlic and celery to a heavy based pan with the rapeseed oil. Fry till soft Add the greens- dandelion leaves, wild garlic, nettle and cleavers. Continue frying for 1 minute Add the potatoes and stock.
