RECIPE OF THE DAY
Tomato Lime and rice dish
2 cloves garlic
2 tins of tomatoes
1 lemon zest and juice
1 lime zest and juice
1 tsp honey
1 pinch himalayan rock salt
1 pint stock
2 cups rice
1 bunch spinach
Chop the onions and garlic finely and sweat them in rapeseed oil till soft and golden
add the tins of tomatoes, honey and pinch of salt then cook for 10-15 minutes
add the lime and lemon zest and juice
add the vegetable stock and then the rice and cook for a further 15 minutes
add the spinach and cook for a further 5 minutes
This can be a stand alone meal or as a delicious accompaniment to chicken, meat, fish, haloumi etc.
This has a gorgeous flavour to it and can be frozen in small batches once cooked and simply reheated on the hob or in the oven when you want it smile emoticon
