Baked apple and cinnamon porridge, so good it tastes like it has to be naughty . This is one of my favourite breakfasts for a cold winters day. Ingredients · 1 apple, peeled, cored and cubed · 1 ½ Tbsp melted coconut oil · 1 Tbsp coconut sugar · 1 tsp cinnamon · 100g jumbo porridge oats · 500ml almond or oat milk · 1 tsp vanilla · 2 Tbsp almond butter · 30g dark chocolate chips · To serve: pomegranate Method 1. Preheat the oven to 160Fan/180*C 2. Mix the apple, coconut oil, coconut sugar and cinnamon in a small oven-proof dish. Stir to coat the fruit and then bake for 20-30 minutes until soft. 3. While the apples are cooking add the milk, vanilla and cinnamon to the oats and leave to soak. 4. When the apples are soft, add them to the oat mix and place back in the oven. Allow to cook for a further 20 minutes. 5. Remove from the oven and serve in your favourite bow with some grated apple and pomegranates and a sprinkling of dark chocolate. If you have a slow cooker I have a great recipe for a slowed cooked version of this dish with steel cuts oats.
